Ensure you have all the ingredients ready: the pouch of steamable lentils, the bag of frozen chopped spinach, a small sweet onion, extra virgin olive oil, ground turmeric, garlic powder, sea salt, black pepper, and optionally heavy cream or oat milk.
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
Add the frozen chopped spinach to the skillet with the onion. Sprinkle in a teaspoon of ground turmeric, a teaspoon of garlic powder, a pinch of sea salt, and a dash of black pepper. Stir well to combine and cook for an additional 5 minutes until the spinach is heated through.
Add the steamable lentils to the skillet with the spinach mixture. Stir to combine all the ingredients and cook for an additional 3-4 minutes until the lentils are heated through.
For a creamy texture, add a splash of heavy cream or oat milk to the skillet and stir well. Cook for another 2-3 minutes until the mixture is creamy and heated through.
Serve the golden lentils with spinach warm in a bowl. Optionally, drizzle with a little extra olive oil on top for added flavor.
